Craving for that Texas BBQ where the portions are the size of dinosaur bones? Well look no further than Grizzly SmokeHouse! I had a chance to sit with Dack, the owner who prepared this delicious rack baby back!
I have travelled extensively throughout the USA and when he said TRUE American smoked meat, I was like “I am in”!! When he opens the full rack, I was reminded of the Flintstone era where Fred Flintstone is eating that massive rib and it takes Wilma the whole entire day to cook it for him! (kinda like smoking the meat) LOL.
I did a little bit of sleuthing and I found out that smoked meat is the result of a method of preparing red meat, white meat, and seafood which originated in the Paleolithic Era. So it dates back to the dark ages! Cool eh!
Smoking adds flavor, improves the appearance of meat through the Maillard reaction, and when combined with curing it preserves the meat.
What does smoked meat taste like? So, when Dack from Grizzly Smokehouse, start by asking him what does smoked meat taste actually taste like, and he will say a huge taste explosion of flavors in your mouth!
Pictures cannot do this any justice so enjoy and I hope the smells oozes forth photos! Smoked meat can be a combination of sweet and salt, bitter or sour. Flavors are dependent on what seasonings have been used and which smoke. You may get a hint of apple or nutty flavor.
The best part of Grizzly Smokehouse is that you get that American BBQ smoked meat right here in Bangkok! What more can you ask for? Right?
When smoking meat for long periods of time, the smoke breaks down collagen (a tough muscle tissue protein) making the meat more tender.
Dack certainly knows what he is doing when is comes to smoked meat as he lived in Texas! Texas is a state known for their large sized portions especially BBQ meat! Much of the flavours that come in this smoked meat are a wonderful blend of spices that pack a small punch of savouriness oozing out in to the olfactory senses! The mouth then begin to water and you slowly unwrap the rack of ribs like it’s Christmas Eve not wanting to be caught but dying to see what’s inside.
Pulled pork is an American barbecue dish, more specifically a dish of the Southern U.S., based on shredded barbecued pork shoulder. It is typically slow-smoked over wood (usually outdoors); indoor variations use a slow cooker. The meat is then shredded manually and mixed with a sauce.
Grizzly Smokehouse will also make burgers and each burger is so jammed packed with pulled pork, cheese and his amazing special BBQ sauce which is homemade and has 14 different variety of spices. The bun alone is to die for!
The smoky, savoury flavour pairs perfectly with the melt-in-your-mouth texture, and it’s so versatile enough to be used in a variety of dishes such as pulled pork hoagies and sandwiches. Furthermore, you can see if you can make a smoked version of Pad Kra Pao Thai style! That would be pretty cool! But dipped in the BBQ is also a great way yo eat these ribs washed down with a nice Singha beer too!
However, we realize that the process can be intimidating to many cooks. Pulled pork isn’t difficult to make, but it does take a lot of time to get it right. Grizzly SmokeHouse is the place that does it right!
So if you have an event like a birthday party anniversary or just any kind of reason to order a big massive wreck as well smoked baby back ribs this is the place you need to come to. He carefully wraps the full rack in foil and then in the waxed paper.
I absolutely loved the delivery packaging of Grizzly Smokehouse. Full on quality ingredients from the cut of the meat to the burger buns! Amazing!
The meat is so tender and literally falls off the ribs in a beautiful pattern of slow smoked cooked tender meat. The BBQ sauce and the delicious masked potatoes on th side were the best paring anyone could have – oh and a nice wine would have added tremendously to the dinner experience.
